Beef and Oxtail Kare-Kare Pasta
Care to level up your Kare-Kare into something new? ‘Di na lang pang-handaan ang Kare-Kare, pang special pasta recipe na rin kaya keri na sa Beef and Oxtail Kare-Kare Pasta!
Ingredients
900g El Real Spaghetti
80g oxtail
500g beef round or short ribs
1 tbsp salt
3 tbsp canola oil
2 pcs white onion, chopped
6 cloves garlic, minced
3 pcs tomatoes, sliced
3 tbsp bagoong
2 1⁄2 cups boiled beef or pasta water stock 1⁄2 cup peanuts, ground
1⁄4 cup peanut butter
1⁄2 cup rice, toasted and ground
1⁄2 cup annatto seeds diluted in 1⁄2 cup warm water 2 pcs eggplant, sliced
1 bunch bokchoy
1 bunch sitaw, cut into pieces
3 tbsp, spring onions
2 tbsp parmesan cheese
Directions
Step 1: Boil 4 cups of water with salt in a pressure cooker. When bubbling, add the oxtail and pressure cook it for about 30 minutes. Drain and set aside. Do the same for the short ribs. Mas papalambutin pa natin mamaya.
Step 2: Lutuin ang El Real Spaghetti according to package instructions. I-drain at itabi ang pasta water.
Step 3: Gisahin ang onions, garlic, at tomatoes in a saucepan. Add bagoong and continue sautéing for about a minute.
Step 4: Add the cooked oxtail and beef and cook for about 2 minutes saka ilagay ang stock at pakuluin.
Step 5: Add ground peanuts, peanut butter, and annatto water. Haluin at takpan in medium heat for about 30 minutes or until the liquid reduces to half.
Step 6: In a separate pot, steam vegetables together para fresh. Ihahalo ito mamaya.
Step 7: Sa Kare-Kare, add ground rice and mix well until the right consistency is reached.
Step 8: Transfer El Real pasta into individual bowls and top with sauce and steamed vegetables, plating the meat on the side. Garnish with chopped spring onions and parmesan cheese.
