Creamy Spinach Pasta

Pasta rich with creamy spinach sauce

Ingredients


1 Healthy Spaghetti 1 cup whole-milk ricotta kosher salt and black pepper 3 tbsp pine nuts (optional) 4 tbsp unsalted butter 3 cloves garlic 1 pound baby spinach 1 cup heavy cream 1/4 tsp grated nutmeg

Directions


Step 1: Add ricota to a large bowl, season with salt and pepper. Set aside. Boil a well-salted water and cook the pasta according to package instructions. Save 1 cup of pasta cooking water. Cook the pine nuts in a deep 12-inch skillet over medium heat until toasted. Melt the butter over medium-lowe heat, add garlic and saute until pale golden about two minutes. Add the spinach, and cook until it wilts. Add the cream and simmer over medium heat. Cook until the sauce thickens slightly, about 2 minutes more. Stir the nutmeg then season with salt and pepper. Add the pasta to the sauce. You may add parmesan on the pasta.
